Well this one went much better. Team ran like an (almost) well-oiled machine. Notably absent was panic, mayhem, confusion and terror for the most part. We stayed calm and let the smokers do the work. We were much more organized than in the past and our past competition experience is helping us out now. Long story short - we got a 2nd place in chicken which was a big milestone for us as it was our first call! We didn't get any other calls but I still felt like it was a great success. We turned in what I thought were our best ribs ever and they only came in front - somedays you never know where the judging will be. I knew we didn't do great in pulled pork which is usually our best category - fortunately, I think I know how to fix it. Brisket flavour was great but we managed to dry it out. I'm going to go back to the drawing board with the brisket and try some new ways out that keep it nice and moist. I'll post results soon. Big thanks to the team and the team wives (and girlfriends, not wives and girlfriends). I almost forgot to mention Scott who came out and gave it a try - he was a huge help. Hopefully he'll be up for some more competitions. I think I have my eye on Oinktoberfest in late September... haven't mentioned it to the team or the wives yet! - Jeff |
