Ohly Smokes at the Roc City Ribfest…. Hi Everyone, Here’s our summary from the contest. In some ways we did great, in some not so much but I guess that is how it goes. We finished 68/69 overall – in large part due to our disqualification in brisket. Somehow a toothpick got in the box which was really too bad because (somehow J ) the brisket turned out great and might have been our best category. I figure that if the brisket got even the worst score (other than DQ’d) we would’ve finished in the top 40. We were: 48th in chicken – wasn’t bad… not sure where to go on this 63rd in ribs – back to the drawing board here 41st in pulled pork – was not our best pork I thought Disqualified in brisket
Some things I think we did well: Turn in went well We built our boxes well (I think – check out the pictures) We were light years more organized than before Some things that went bad: I think I used a rub that was too old. I think I need to adjust the spiciness up a bit and use fresher spices The sauce was off – I’m going to work on some new recipes and start with some different sauces for the chicken and brisket The ribs were overcooked I thought that the meat we used this time was great. So back to the drawing board and some recipe testing. We’ll be looking for some victims sometime soon to let us know how it really tastes. So we had a bit of a rough contest but I’m looking forward to the next. Definitely a big time learning experience. As always the event was great and the other teams were great to us. Especially Penalty Box BBQ who placed first in chicken – they helped us a ton. Thanks to everyone for your support!
