Still working on our number one choice for charcoal but we enjoy using Royal Oak Restaurant Grade (not yet available in Canada for some reason). However, we're open to testing any and all comers so if you have a bag to send us just let us know.

We use a Tuff Tent instant canopy. It is a breeze to setup and take down, has walls and is pretty spacious. We're returning our first one though as it had a buckling incident in a Wellesley wind storm. The second one arrived on February 10th, 2010 and we're looking to get it screenprinted with our logo.
